Lion's Mane 'Steak'

INGREDIENTS
1lb Lion’s Mane mushrooms
2 tbsp canola oil or alternative
2 tbsp BBQ seasoning
1 1/2 tsp onion powder
1 1/2 tsp poultry seasoning
Salt and pepper
3 Tbsp butter or vegan alternative
4 Tbsp BBQ sauce
INSTRUCTIONS
Preheat oven to 400ºF (200ºC) convection or 420ºF without. Trim mushroom bottoms flat.
Heat an ovenproof skillet with oil over medium-high. Add mushrooms flat-side down, cook 1–2 min. Place a second skillet on top, pressing as they release water. Sear 5–6 min until browned.
Flip, add oil, and press until mushrooms shrink to ¾-inch, about 5 min. Season with BBQ seasoning, onion powder, poultry seasoning, salt & pepper. Flip and sear both sides until charred.
Bake 10 min. Remove mushrooms; heat pan over medium, stirring in butter and BBQ sauce to deglaze.
Spoon sauce onto plates, slice mushrooms, and fan over sauce.
Garnish with thyme or parsley. Enjoy!
