Oven Roasted Chestnuts

INGREDIENTS

1lb chestnut mushrooms

3 tbsp unsalted butter, melted

1 tbsp olive oil

2 garlic cloves , finely minced

1/2 tsp each salt and pepper

1 1/2 tbsp lemon juice (optional)

1 tsp fresh thyme leaves (optional)


INSTRUCTIONS

  • Preheat your oven to 220°C (450°F) or 200°C (400°F) if using a convection oven.

  • In a large mixing bowl, combine the mushrooms with melted butter, olive oil, minced garlic, salt, and pepper. Use a rubber spatula or your hands to toss everything together until well coated.

  • Spread the mushrooms in a single layer on a baking tray. 

  • Place the tray in the preheated oven and roast for 20-25 minutes. 

  • Remove from oven. If using lemon and thyme, push mushrooms together onto one side of the tray, drizzle with lemon, sprinkle with thyme and toss. Serve immediately.


These roasted mushrooms make a perfect side dish for steak, chicken, pasta, or even as a topping for toast!
